Why do I have to have one?

The answer is quite simple, only a standard convection oven has a removable tray on which you can place the pizza before it goes into the oven. All other ovens don’t have this, so you’ll need a shovel. Although you can bake a great pizza with a hot air oven, the more fanatical pizza bakers go for an oven that uses real flames.

There are some important things to keep in mind if you want to bake a real Italian pizza with those nice dark specks. One of the most important things is the temperature. This is best as high as possible (400 to 500 degrees Celsius). But the substrate (pizza stone) must also have this temperature. And this is where the pizza shovel comes in handy.

How do I use a pizza shovel?

Heat your oven to the desired temperature. Start heating your oven well in advance. If your thermometer indicates that it has reached the correct temperature, then this applies to the warm air in the oven. The often thick pizza stone usually takes a little longer to reach the same temperature. When you are sure that your oven or barbecue is very hot, start preparing your pizza.

Punch out the bottom to the desired size. Now take some flour or semola and sprinkle it over your pizza shovel. Place the bottom on the shovel. Now cover your bottom with sauce and desired toppings . Before you slide your pizza into the oven, you can make it a little bigger by pulling on the edges. Now pick up the shovel and shake lightly to make sure the pizza is not stuck to the shovel. Now comes the most important moment, putting the pizza on the stone. This takes some practice so make a few extra balls of dough so you always have a backup. Place the front of the scoop on the stone where you want the back of the pizza. Now in one quick movement, bring the shovel back towards you so that the pizza is on the stone.
