Our truck always takes a large load of polenta with it when it is in Italy. This (side) dish is actually a kind of substitute for potatoes or rice. Tasty, nutritious and ideal for those who want something different.

This maize semolina is the perfect basis for polenta bramata: the somewhat more robust variety. For the smoother version you will need cornmeal. The flour is boiled with water, for about 40 minutes for the classic variant. Add a little parmesan and you have a delicious and typical (Northern) Italian side dish for dinner!

What is polenta?
If you are new to this dish, you may want to learn a little more about it. Because a replacement for rice, pasta or potatoes, what exactly does that mean? Polenta is best described as a kind of porridge. It is made from ground, dried corn and literally means something like ‘pulverized’. Not only in Northern Italy they love this side dish, it is also widely eaten in countries such as Slovenia, Croatia, Romania and Austria.
And how do I prepare this dish?
As a basic ingredient you will need corn flour or corn semolina. As explained, corn semolina, such as this one in our shop, provides a slightly coarser result that also has slightly more bite and taste than the smooth polenta of corn flour.
To make polenta from the flour, you need to boil it. It takes at least 40 minutes before it is well cooked and nice and creamy. After that it is ready to be eaten, but you can also grill or bake it. For example, make tasty fries from the oven or crispy cubes. In that respect it is just as versatile as the Dutch potato!
