Semolina is an all-rounder that is used for bread, pasta and pizza. It’s the perfect flour to get your pizza ball through so it won’t stick to the counter or worktop when you make it in the right size. In addition, it gives your pizza crust a nice crispy bite.

But semolina is also used for baking many types of Italian bread. You can recognize it by the yellow color of the bread after baking. Semolina has a coarse grain and is made from Durum grain. In Italy (real) pasta may only be made from 100% durum grain.

Caputo semola is a semolina. It is ground to size to get the perfect grainl format. It comes fresh from the mill in Naples and is available in 1 kg or 5 kg packaging.

This flour also has a very high elasticity and is also perfect for making durum wheat bread. To do this, mix 10% semola with 90% caputo blue , red or classica .

What is semolina flower?

Semolina is a coarse and purified flour made from Durum grain. In Italy (real) pasta may only be made from 100% durum grain.

This Semolina is light yellow in color and is widely used to roll out dough, such as pizzas. This gives the outside of the dough a delicious crispy bite. It also forms the basis of couscous and can be mixed with bread for a tasty variation. In the Netherlands it is better known as semolina. You can also make delicious semolina pudding with it!

How is it made?

This semola is made in Italy in the Caputo mill. This is done by throwing the raw grains between 2 rotating plates. These plates are only millimeters apart. As soon as the grains come in between, the plate scrapes the fiber off the outside of the grain. What remains is the inside of the grain. This grain is then broken into smaller grains. By increasing or decreasing the distance between the plates, you can make fine or coarse flour.
