Speck Affumicato

Speck Affumicato is a delicious Italian ham. The ham is smoked and dried. This specialty comes from Trentino Alto Adige (South Tyrol) in the north of Italy.

This smoked ham is made with only the finest, leanest pork. The meat is seasoned with fresh herbs from the mountains and then lightly smoked. The ripening of the meat takes place in a dark room with a continuous supply of fresh air. According to the South Tyroleans, the best speck is made as follows: with little salt, little smoke and lots of fresh air. This meat is matured for 22 months.

Speck afumicato is one of the most beloved delicacies in South Tyrol . In the past, this meat was widely eaten by farmers, because it was a good source of energy for heavy work on the land. Later, this delicacy became an increasingly important part of the menu at ceremonies and parties. The flesh has a deep flavor and spicy, salty undertones.

How do you eat this ham?

In Trentino they like to cut this meat into small cubes and eat it with good (red) wine or beer. Speck afumicato is therefore very suitable for a drink. Cut the meat into thin slices, as with carpaccio, and season with a few drops of extra virgin olive oil . Serve with some Italian cheese and let the fun begin.

You can also eat the ham on a bruschetta or use it in hot dishes, such as a pasta sauce. By adding this meat you immediately make something special from a simple tomato or cream sauce. The deep, spicy flavor also pairs particularly well with mushrooms and asparagus.
