Tête de Moine is AOP certified so you can be sure that it is an authentic Swiss monastery cheese. It is produced in the Jura Mountains in the Swiss Alps.
This cheese is made from raw cow’s milk, which means that the milk has not been heated before it is made into cheese. The cheese as a whole weighs only 820 grams and it always has the shape of a cylinder.
What does Tête de Moine taste like?
The cheese matures for 3 to 4 months. It smells sharp and intense, but don’t let that confuse you. The cheese tastes very good and as soon as you cut it open it smells incredibly nutty and fruity, a delicious combination. It’s a nice balance of sweet and salty.
You have to slice this cheese
This cheese is shaved horizontally into florets. This creates a light yellow cheese explosion with a brown crust. This is done with the help of a handy little tool called a “Girolle” or “Girouette”. These names literally mean “To scrape”.
How does that work?
Place the cheese on the iron pin in the middle of the shelf. Then take the handle that is attached to the Girolle and place the knife on the top of the cheese. You then carefully turn the handle in circles over the top of the cheese so that nice shaved cheese florets are created.
