Description

Appenzeller Soft matures for about 3 months before reaching its perfect taste. Although this cheese is known as one of the spiciest Swiss cheeses , this variant with the silver label has a slightly softer taste. It also has a pleasantly soft structure and a fruity aroma. Appenzeller combines perfectly with fresh fruit. Serve a piece on a nice cheese board or use it as a seasoning in the fondue, because it is a ideal processed cheese.

Secret spice mixture

In the former canton of Appenzell , where this cheese is still produced, it almost seems as if time has stood still. Traditions are highly valued here and crafts and traditional costumes are still passed on from generation to generation. That is good news for cheese lovers, because the traditional recipe for Appenzeller is also preserved. During maturation, the cheese is rubbed with a secret spice mix known only to the old cheese makers. It is this mixture that provides the unique taste.
