This is a luxurious Spanish cheese that comes from the Asturias region. The cheese is also unique because it is made from a mix of cow, goat and sheep milk. This cheese is highly valued by the real connoisseurs. All the milk used for this cheese comes exclusively from herds that graze in the mountain region of Asturias.

This is a cheese with a PDO quality mark (Protected Designation of Origin). A semi-hard, raw milk blue cheese. The cheese is matured for 2 months in limestone caves. In these caves it is cold and damp. This ensures that a natural mold develops in the cheese. And this explains the difference in price between, for example, a gorgonzola and this cheese. Where with cheaper blue cheese the bacteria is injected with needles into the cheese, this happens naturally with Queso Cabrales. The mold first forms on the outside and then finds its way to the inside of the cheese.
