What is Ricotta?

How do you make Ricotta?
Ricotta is a wonderful Italian product born of frugality. It is like this. When making cheese, rennet is added to fresh milk. This natural bacteria ensures that the moisture splits from the solid substance in the cheese. The solid substance is curd, the liquid is called whey.
Whey is a residual product and you could just throw it away. But that’s actually a very bad thing. Italians soon found out that you can make another delicious product from the whey, namely this delicious fresh cheese!
