Provolone Piccante is an Italian classic from the south of Italy. The taste is slightly spicier and fuller than that of Provolone Dolce.
This centuries-old Provolone Piccante comes from a small village at the foot of the Vesuvius volcano. The southernmost region of Italy. The curd is “pulled” little by little and then kneaded into the right shape. The cheese is matured for 12 months . Goat and/or sheep rennet is mixed in, making it a bit spicier and spicier .
