Delicious pesto with Pecorino

Every now and then we like to share a tasty recipe that you can make with our products. You can combine endlessly with Pecorino, in salads, on pizzas, carpaccio, meat, fish and so on . But what is also very tasty is pesto made from this specialty. What do you need for this?

50 basil leaves
2 cloves of garlic
1 small handful of pine nuts
Freshly ground pepper and salt
6 tablespoons of very good olive oil (available in our shop)
80 grams pecorino cheese (can also be replaced with parmesan cheese)


Take a frying pan and put it on a medium heat without oil or butter. A handful of pine nuts can be placed in the pan when it is at the right temperature.

Toast the seeds to a nice dark brown colour. But be careful not to burn them! So keep turning them regularly. Now take a mortar and throw in the basil leaves and extra virgin olive oil. You must finely grind all the leaves until a smooth mass is formed. Now you can also add the pecorino, freshly ground pepper and salt, garlic cloves and pine nuts. Again, finely grind until it is a nice homogeneous mass.

Your pesto with pecorino Toscano is now ready . It is important that you keep the pesto in the refrigerator. You can even freeze it if you want.
