What is Sovrano buffalo parmesan
Sovrano buffalo Parmesan contains all the good ingredients that a normal Parmesan also has. The big difference is the milk, Sovrano is made with a mix of buffalo and cow’s milk , because the fat percentage of buffalo milk is higher, the cheese becomes much creamier . The cheese is a lot more exclusive and you can taste it. After all, keeping buffalo is also a bit more complicated than normal dairy cows. In short, we can say that Sovrano is a very luxurious version of normal Parmesan cheese .

It can be complicated to distinguish all Italian cheeses, but we like to keep it simple and explain what Sovrano buffalo parmesan is.
The name “Parmesan” is actually used for all hard Italian cheeses. Yet there is a big difference between Sovrano, Grana Padano and Parmigiano Reggiano.

Regardless of where cheese is produced, it may bear the name “Parmesan”. One can, so to speak, make cheese on the South Pole and then call it Parmesan. But that does not mean that he has the PDO quality mark. When we talk about Sovrano buffalo parmesan, you can be sure that the cheese is produced in Italy according to the PDO quality mark .

Sovrano buffalo is the highest quality Parmesan cheese made from buffalo milk. It is aged 10 months longer as Grana Padano. Sovrano buffalo parmesan is similar to Parmigiano Reggiano, but made from buffalo milk. Therefore, this cheese is an absolute delicacy.
Grana Padano must have been aged for at least 9 months according to the quality mark, Parmigiano Reggiano must have been aged for at least 12 months, and that also applies to the Sovrano. The cheeses in our webshop have matured a lot longer, 14 and 24 months respectively. Grana Padano can be produced throughout Italy. Parmigiano Reggiano and Sovrano are tied to specific regions .
Taste difference between buffalo milk and cow milk
There are 7 major differences between how buffalo and cow milk tastes.
1. Cow’s milk has a lower fat percentage than that of buffalo. That is why it is slightly lighter in taste and easier to digest.
2. Buffalo milk is thicker and creamier than cow’s milk. The products made from it are therefore slightly more powerful. Milk is widely used in Indian cuisine.
3. Buffalo milk can naturally be stored longer due to a higher amount of peroxidase. This is an enzyme that is naturally present in milk. Fresh cow’s milk must often be consumed within 2 days, buffalo milk can be stored a little longer.
4. Cow’s milk contains more water than buffalo milk.
