This delicious soft French cheese comes from Beauzac in south-central France. It is a fairly mild, creamy cheese with small blue veins. This blue cheese has a slightly spicy undertone.
Rochebaron is a creamy cheese with a pungent smell. He comes from the Blue Cheese family. The taste is very creamy with an aroma of mushrooms. It is made from pasteurized milk.
Another name for this cheese is Montbriac. This cheese shows exactly the specialty of the French : creamy, soft cheeses with a strong aroma and an intense taste.
Striking about the Rochebaron is the crust, which is rather gray. This is due to the layer of ash with which the cheese is sprinkled after the ripening process. The ash ensures that the cheese is less acidic just below the rind. You can eat this gray crust as usual.
Inside, the cheese has blue veins. During production, rennet is added to the pasteurized cooling milk, creating curds. This goes into a mold and is pricked with a Penicillium fungus. During ripening, blue veins appear in the cheese at the spots of the fungus.
Serving tips Rochebaron
This creamy cheese with a little spice is very tasty as dessert cheese and on toast. Add a glass of wine and let the fun begin. Rouchebaron or Montbriac is also often eaten with mushrooms in port. Due to the aroma of mushrooms, this cheese goes very well with mushrooms.
