How do you serve reblochon?
The story behind this cheese is very interesting. It comes from the French word “Reblocher”, which means “to squeeze the udders again”. This had to do with the way the French used to pay their taxes. They paid for this with milk. The tax inspector came by, the cows were milked and the proceeds went with them. After this, the farmer returned to the stable and milked the cows one more time to obtain some more milk for making their cheese. This milk was much heavier and fatter than the first time, ideal for making fresh cheese.
