Emmentaler cheese is the ultimate boss of Swiss and French cheeses . It is a delicious semi-hard cheese from cow’s milk, also known as “gatcheese”. Emmentaler is produced in both Switzerland and France.
At the Hollandskaashuis we sometimes have Swiss and sometimes French Emmentaler in stock, so it is possible that you will receive one of both. Unfortunately, we cannot tell you in advance which variant.

Emmentaler cheese owes its name to the valley where it comes from. This valley is located on the river Emme in Bern. About 12 kg of milk is needed to make 1 kg of cheese . Milk has been made in this valley since the 13th century. It is the oldest cheese in Switzerland and has an important place in Swiss and French culture.
The cheese made in this region is certified with the AOP quality mark , which stands for ” appelation d’origine protégée “. There are many requirements for this quality mark, so this organization guarantees that all cheeses with their quality mark are genuine authentic cheeses. T he Emmentaler from the Hollandskaashuis naturally complies with the AOP quality mark.

This Emmentaler cheese is lactose-free
According to the traditional recipe, this cheese matures for 6 months. During these months of maturation, the lactose in Emmental cheese is naturally converted into milk sugars . As a result, the amount of lactose is nil* ( less than 0.1 gram per 100 gram ).
