Monterey Jack is a semi-hard, white cheese. The cheese originated in Monterey, California , where it was introduced in 1700 by Spanish missionaries. The name “Monterey Jack” originated when this cheese was commercially marketed by David Jack, a local businessman.
This white cheese is made from cow’s milk and has a mild, slightly sweet taste. This type of cheese has a relatively short ripening time of about 1 month. The harder variety, “Dry Jack”, ripens to about 6 months.
