Young matured farmer’s cheese

Young mature cheese is slightly creamier than Gouda cheese because the milk is not pasteurized before it is made. This creamy cheese can be used in an infinite number of dishes. Just like in this mustard soup with farmer’s cheese, an onion flan, a potato gratin or a stew with cheese.

Today we have chosen to show you a dish of mustard soup with farmer’s cheese, which goes very well with the cheeses on our website. Have fun cooking this dish!

Ingredients for mustard soup with young matured farmhouse cheese.

2 large leeks
25 grams of butter
Sunflower oil
2 tablespoons farmer’s mustard
chicken boullion
cup of whipped cream
150 grams of young matured farmer’s cheese, but in principle it is also possible with goat’s cheese.
Some fresh chives that have been finely chopped
salt and pepper to season it all

Instructions:

Take a pan and put it on the stove, then add the butter.
The thinly sliced leek can be added when the butter has completely melted.
When the leek is soft but not yet discolored, the farmers mustard can be added, let everything cook for a few minutes.
Dissolve the chicken stock in water and add it.
Let the whole simmer for 20 minutes, it is best if it just isn’t boiling.
Then puree the whole into a soup, add the whipped cream and bring the soup to a boil.

Time for farmer’s cheese

Stir in the young farmer’s cheese, this can be cut into small cubes or grated. Bring to the boil so that the cheese melts well into the soup.

Season with salt and pepper, and just before the soup is on the table, add a good spoonful of mustard. To finish, garnish the soup with some thinly sliced chives.
