This Reypenaer cheese has matured for 2 years under perfect conditions in the warehouse in Woerden . It is a good cheese as an aperitif, but also to start the meal.

During the prestigious International Cheese Awards in Nantwich, Reypenaer was named the best Gouda cheese in the Netherlands no fewer than three times (in 2005, 2007 and 2009).

The cheese is vacuum packed and delivered to your home, so it has a nice long shelf life.

Reypenaer cheese

This Reypenaer cheese has matured for 2 years under perfect conditions in the warehouse in Woerden . It is a good cheese as an aperitif, but also to start the meal.

Quiche with Reypenaer

Today we are going to make a delicious quiche with Reypenaer cheese. A quiche always comes in handy, it can be eaten hot or cold and actually at any time of the day.

Instructions

Take a pan and melt some fresh butter over a medium heat. Cut an onion into rings and throw it into the pan.
Saute the onions until they are translucent. When the onion is well fried, it can be removed from the heat.
Preheat the oven to 180 degrees and take some thawed puff pastry. Prick the squares with a fork. Take a large baking pan and place the puff pastry in it. Make sure you press the leaves together well so that a nice whole is created.

Pre-bake the bottom

The mold can now be placed in the oven for 15 minutes to pre-bake the dough. Now remove the mold from the oven and let the dough and mold cool down. Take a bowl of cream and 3 eggs, throw it in a bowl along with a pinch of nutmeg and some fresh chopped chives. Season with fresh salt and pepper to taste.

Add the checkered onions and 100 grams of grated Reypenaer cheese. The entire mixture can go into the dough base.
Top the top of the quiche with more grated cheese. After 30 minutes the quiche is ready and you can enjoy your delicious freshly made quiche.

You can supplement the recipe with fresh vegetables and other fillings of your choice. Enjoy your meal!
