What do we need for fritters with old Gouda cheese:
75 grams of white sifted flour.
3 deciliter semi-skimmed milk
250 grams old Gouda cheese
Salt and pepper
Red pepper, may be either chilli or cayenne.
6 to 8 tablespoons breadcrumbs or breadcrumbs
Good frying oil, preferably sunflower oil
Instructions for fritters:
Take a pan with a thick bottom. Stir the flour and milk until smooth.
Keep stirring and stirring until everything boils. make sure that the whole is really smooth and there are no more lumps in it.
Once it boils, let it simmer for another 3 minutes. Remove everything from the heat and let it cool down to about 40 degrees.
Take 6 eggs and beat in only the egg yolks! Save the whites of 2 eggs, we’ll need that later.
Time for cheese
Now the old cheese can go through it, grate it completely through the mixture. Then some pepper salt and your chili or cayenne pepper.
Now the Worcestershire sauce can go through it, a few drops is enough. Stir everything well until it is a nice smooth whole. Take a baking sheet and wet it with water. Spread the cheese dough over it until you have a layer about 1 cm thick.
Place the baking sheet in the fridge for an hour. Take the whites of the 2 eggs that you set aside earlier, beat them with 1 tablespoon of water.
Cut circles out of the dough with a glass, a gas with a diameter of about 5 centimeters is enough. Dip them in the egg white and dip them in the breadcrumbs. Bake them for 10 minutes at 175 degrees Celsius.
