What is lavender cheese?
Lavender is a plant that belongs to the lip flower family. It is a shrub and is often used as a seasoning to flavor dishes. Did you know that lavender also has a calming effect and reduces stress?
Lavender oil is often made this way. Lavender cheese with its beautiful purple and blue color is an excellent cheese for a cheese board.

Ingredients salmon tartare with farmers lavender cheese for 7 people
3 slices of smoked salmon
400 grams of fresh salmon
Half a lemon
salt and pepper
1.5 dl olive oil
1 egg (just the yolk)

The fresh salmon can be filleted and cut into small pieces. You can cut the smoked salmon into strips.
Marinate both types of salmon for half an hour in extra virgin olive oil , with fresh chives and the juice of half a lemon.
Now make a mayonnaise from egg yolk and oil, or if you want it a little easier, you can also buy a good farmer’s mayonnaise, preferably without additives.
Season both the mayonnaise and the salmon tartare well with salt and pepper.
Now take the mixed salad and arrange it on the plate. In addition comes the salmon tartare.
You can use a mold if you want to make the tartlet nice and round.
Dress the whole with the dressing and shave the lavender cheese over the salad and the tartare. Enjoy your dinner!
