Amsterdam cheese

Amsterdam cheese is for the connoisseurs , the Burgundians, the real cheese lovers.
This cheese has a high fat percentage, which is exactly what gives it that full creamy taste .
The fat content of Amsterdam cheese is indicated by a number and a plus sign, 50+ is a full-fat cheese with a lot of taste. A real Amsterdam cheese.

A whole cheese is 4 kilos. A whole cheese is also called a wheel, because of its round shape.
This cheese is less heavy than other cheeses, a whole wheel is only 4 kilos. That is why this cheese is also very nice to give as a gift. You can already buy a whole wheel of 4 kilos for €49.95!

Pasta with Amsterdammer young matured

This cheese is also very good to use in a creamy salmon pasta. Today we are making a delicious pasta with salmon and Amsterdammer.
What do you need.

375 grams of pezullo caserecce pasta (available in our webshop)
150 grams of fresh salmon
1 tablespoon olive oil
3 garlic cloves
250ml whipped cream
15 grams of chives
1 teaspoon mustard powder
1 lemon
100 grams of Amsterdam cheese
Sun dried tomatoes

Instructions

Cut the fresh salmon into small pieces. Take a frying pan and toss in the extra virgin olive oil.
Place the pan on medium heat and cut the fresh garlic cloves into small slices.
The garlic is allowed in the pan and as soon as it is fried, the whipped cream, chives, mustard pepper and fresh pepper and salt can be added.

Bring the mixture to a boil, lower the heat and allow the sauce to reduce. The salmon can now be added and squeeze half a lemon over the pan, make sure there are no seeds in your sauce!
Stir well and heat up slowly.
Cook the pasta in salted water until al dente. Drain the pasta well so that all the moisture is gone and toss it back into the pan.

Now take the pan with sauce and throw it through the pasta and mix it all together. Finish the plates with the pasta and top the pasta with sun-dried tomatoes, freshly grated Amsterdammer cheese and chives. Enjoy your dinner!
