Italian flour is classified into several numbers. those numbers range from 00, 0, 1 to 2. This is type 1 flower. With this you can make delicious light brown dough that is just short of whole wheat.

When the miller grinds and sieves the grain, he determines what type of flour it will become as he grinds and sieves it finer. Type 00 flour is the purest and finest flour that exists. Here all the membranes of the grain have been sieved away and this makes the dough super white and soft.

With type 2 (integral) the whole grain is ground with membrane and all. This gives the dough a nice brown color and the dough is whole wheat. Type 1 dough is therefore just in between.
