This is a gluten-free caputo flour and is sold under the name Fioreglut, which is Italian for gluten-free.

Ingredients: Gluten-free flour starch, dextrose, corn starch, buckwheat flour, rice starch, psyllium seed fiber, thickener: Guar and seasoning

This gluten-free flour is specially formulated for people with a gluten intolerance.

How do you make pizza dough from this gluten-free flour?

Supplies:

1 kilo of flour
800ML water
15 grams Caputo yeast
35 grams of olive oil
35 grams of salt

Mix all ingredients in a mixer, make sure to use a special dough hook. Mix everything for about 5 minutes so that everything is well mixed and there are no more lumps. Cover the dough and put it in the fridge for about 30 minutes.

Remove the dough from the refrigerator and divide it into pieces of about 250 to 280 grams. The dough balls should now be put back in the fridge tightly covered. They should rise for at least 3 hours, but the longer the better. The ideal rising time is about 24 hours.

Remove the dough balls from the refrigerator and use some more gluten-free flour to spread on your work table. The best result is achieved by stretching the dough ball by hand into a round shape. Top your pizza as you like and bake it in your oven for 3 minutes at 350 degrees Celsius.
