What is lactose intolerance?

Lactose is a sugar found in milk. Lactose is converted into lactic acid in the body by lactase. The production of lactase often decreases as you get older. But it could also be that it has always been absent.
This can cause unpleasant symptoms when eating lactose . How much lactose you can eat varies from person to person. We can roughly say that the hard cheeses (from matured) are as good as lactose free. ( less than 0.1 gram per 100 gram ). This is because during the ripening process the lactose is converted into lactic acid.
The cheeses in this category therefore naturally contain less than 0.1 grams of lactose per 100 grams and fall under the name lactose-free cheese. They can therefore usually be consumed by people with lactose intolerance. Keep in mind that it varies per person how much lactose you can eat.
