At the Dutch Cheese House we stand behind the cheese we sell. One of the cheeses we are particularly proud of is the Fryske cheese. There is a beautiful story behind this cheese and we are happy to tell it. Cheesemaker Catharinus Wierda is the maker of this cheese and is a specialist in the field of Frisian cheese.

Catharinus told the story behind his responsible cheese especially to the Dutch cheese house, and we are happy to share that with you.

“I started 3 years ago in Friesland as a sustainable entrepreneur of De Fryske cheese. The whole milk from 5 Frisian farmers is used to make a delicious 50+ cheese, free of dyes and suitable for vegetarians. The taste has since been rewarded with a Super Gold at the World Cheese Awards. The farmers work in a ‘nature-inclusive’ way, with great care for meadow birds and herb-rich grassland. In this way, De Fryske contributes to more biodiversity in Fryslân.

The full and creamy taste of the Belegere Fryske is due to the fact that the cheese is made from whole milk (50+) and, moreover, 5-6 months of natural maturation (longer than a ‘normal’ mature cheese). You can recognize the Belegere by its beautiful Frisian-blue coat. †
